Chajá is a Uruguayan cake that consists of 3 layers of sponge cake stuffed with syrup, dulce de leche and a delicious whipped cream. Postre chajá (or chajá cake) was invented by Orlando Castellano, owner of the pastry shop Las Familias, in the city of Paysandú. Paysandú is the capital of the department of Escudo. It is one of the main cities in Uruguay, with 75,000 inhabitants.
